🍲 CHEESY CHICKEN PATTY MEATBALL + PUMPKIN SPICE STEW 🍲

Gosh posting this makes me crave for my chicken patty again!😋

The stew actually tasted better if you kept in overnight as the flavours starts to blend together and more pronounce. The added milk makes it even creamier.

If you do not know me, I’m all about comfort foods. I prefer my food always warm and hot. To be honest I don’t really fancy cold stuff unless that particular food is meant to be eaten cold. 🤣

Recipe for Meatball (make 4 patties)
– 1 1/2 tablespoon of wheat flour
– 1 egg
– 100g of minced chicken
– 1/2 teaspoon of cayenne
– 1.2 teaspoon of Chinese 5-spice powder
– 1/2 teaspoon of garlic powder
– 1 tablespoon of ground almond flour
– 1 teaspoon of parmesan cheese
– 5 florets of broccoli (chopped finely)
– 1 tablespoon of corn
– mozzarella cheese

Steps:
1. Mixed everything in a bowl and shape into 4 patties. Stuff mozzarella inside each patty. Coat the patty with almond flour.
2. Pan fried the patty and cook through.

Recipe for Pumpkin Spice Stew (make 2 servings)
– pumpkin
– 1 tomato
– bell pepper
– 1/2 white onion
– 4 cloves of garlic
– handful of baby spinach
– 1/2 teaspoon of cayenne
– 1/2 teaspoon of cumin
– 1/2 teaspoon of white pepper
– 1/2 cup of almond milk
– 1/2 cup of water
– salt

Can be cooked either with a pressure cooker or stovetop. I made my mind on the stove under slow fire.
